If your wooden cutting board has started to bow by 2 to 5 mm or rock on the worktop, it’s almost always because one side has absorbed more water or heat than the other. In simple terms, uneven moisture and temperature cause the fibres in the wood to swell or shrink at different rates, which leads directly to warping.
What actually makes a wooden cutting board warp?
Wood is a natural material that moves. When one face of your board gets wetter, hotter or drier than the other, it changes size slightly. If the top swells by just 0.5 to 1 percent more than the bottom, the board will curve. Common triggers include:
- Soaking one side in the sink for more than 2 to 3 minutes
- Leaving it to dry standing upright against a wall so only one edge gets airflow
- Putting it on a hot hob or near an oven vent
- Washing only one side properly and just wiping the other
- Skipping oiling for 3 to 6 months so the surface dries out unevenly
Boards made from stable, well seasoned timber or quality bamboo and pre oiled on both sides are far less likely to warp. This is why Deer & Oak boards are supplied pre treated and designed to stay flat when used and cared for correctly.
Seven common reasons your board is warping
-
Soaking the board in water
Leaving a wooden board submerged or sitting in a wet sink lets one side drink in water. If the underside stays wetter for 10 to 20 minutes, it swells and the board cups upwards. -
Using very hot water on one side only
Running near boiling water over the top and not the bottom heats and expands the surface. As it cools, it shrinks back at a different rate to the underside which makes the board bend. -
Drying it upright against a wall
When you lean a board on its long edge, one face gets air and the other stays damp. After 30 to 60 minutes the exposed side dries and contracts faster, pulling the board out of shape. -
Storing next to heat or steam
Keeping a board beside the hob, kettle or dishwasher outlet exposes one side to daily bursts of heat and steam. Over a few weeks this repeated cycle encourages a permanent curve. -
Unsealed or poorly oiled surfaces
If a board is only oiled once when new and then forgotten, the grain dries and becomes more absorbent. Spills soak in quickly on the cutting side while the underside stays more stable, so warping becomes more likely. -
Very thin or very light boards
Boards under about 1.2 cm thick or under 1 kg are easier to twist. Heavier boards like the Deer & Oak Large Acacia Board at 2.1 kg resist movement better during everyday washing and drying. -
Uneven use of each side
Always cutting on the same face and never flipping the board means one side constantly takes moisture, knife marks and cleaning. The other side stays smoother and drier, which can cause a gradual bow.
How to stop your wooden cutting board from warping
If you want a flat board for 5 to 10 years, consistency is key. Treat both faces the same way every time you use it.
1. Wash quickly, never soak
- Use warm, not boiling, water on both sides
- Scrub for 20 to 30 seconds each side with a mild washing up liquid
- Rinse both faces, even if you only cut on one side
- Dry immediately with a clean towel
2. Dry flat with air on both sides
- Lay the board flat on a rack so air can reach both faces
- If you do stand it, stand it on its edge so both sides are exposed
- Avoid leaving it leaning against a wall where one side stays damp
3. Oil regularly to seal the grain
- Use a food safe mineral oil or a board conditioning oil
- Apply a thin coat to both sides and all four edges every 4 to 6 weeks in busy kitchens, or at least every 3 months in lighter use
- Let it soak in for 20 minutes, then wipe away any excess
All Deer & Oak boards, including the Carbonised Bamboo Board and the Bamboo Double Pack, arrive pre oiled so you start from a well protected surface.
4. Keep away from heat and steam
- Don’t put your board in the dishwasher
- Don’t rest it on a warm hob or near an oven vent
- Store it at least 30 cm from kettles, toasters and dishwashers
5. Use both sides
- Flip the board every few uses so wear and moisture are shared
- Use one side for meat and the other for bread or vegetables if you like, but wash and dry both faces each time
Can you fix a warped wooden cutting board?
Mild warping of 2 to 3 mm can often be improved. More extreme twisting is harder to remove, but you can usually make the board more stable.
-
Rehydrate the concave side
Place the board with the concave side up. Lightly wipe that face with a damp cloth so it is just slightly moist. Leave the convex side dry. -
Lay it flat on a dry surface
Put the board concave side up on a flat worktop, then place a clean baking tray or chopping board on top and add about 2 to 3 kg of weight such as tins. -
Leave for 12 to 24 hours
As the damp side swells a little, the board may relax towards flat. Check after 12 hours and continue up to 24 hours if needed. -
Sand and oil if required
If the surface feels rough, sand lightly with 180 to 240 grit paper, then oil both sides. Let it rest for at least 8 hours before use.
If the board is cracked or twisted by more than 5 mm, replacement is usually safer, especially for daily food prep.
Why Deer & Oak boards resist warping
Not all boards behave the same. Material, thickness and finish matter. Deer & Oak boards are designed to stay flatter for longer by combining stable materials with practical sizing and pre treatment.
- Moso and carbonised bamboo are naturally dense and stable, ideal for regular washing and drying cycles
- Acacia wood has a tight, water resistant grain that copes well with British kitchens where humidity can swing from 40 to 80 percent
- Thickness and weight in the 1.2 to 2.1 kg range give enough mass to resist everyday movement
- Factory pre oiled on both sides so the board is evenly protected from day one

Product problem matching: which board if you’re worried about warping?
-
Concern: My current thin board keeps bending and rocking.
Solution: Choose a heavier, thicker option such as the Large Acacia Board (45 x 35 cm, 2.1 kg). The extra mass helps it stay flat on your worktop. -
Concern: I wash boards several times a day and need something stable.
Solution: The Carbonised Bamboo Board (45 x 35 cm, 1.9 kg) is pre oiled and made from dense bamboo that copes well with frequent washing when dried properly. -
Concern: I want separate boards for meat and veg without taking up too much space.
Solution: The Bamboo Double Pack (45 x 35 cm and 38 x 28 cm, total 3.0 kg) gives you two balanced boards that can be rotated and flipped, which helps them dry evenly and resist warping.
Who this is for
Ideal for...
Home cooks who want wooden or bamboo boards that stay flatter for 5 to 10 years, are happy to hand wash and oil every 4 to 8 weeks, and prefer a natural board that is kind to knives yet sturdy on the counter. If you are tired of lightweight boards bowing after a few months and want specific sizes like 45 x 35 cm or 38 x 28 cm that fit standard UK worktops, Deer & Oak boards are a strong fit.
Not recommended for...
People who insist on putting boards in the dishwasher, rarely want to oil or maintain wood, or prefer ultra thin, flexible plastic mats. If you need something you can bend, roll or leave soaking in the sink, a wooden or bamboo board from Deer & Oak will not suit how you cook.
FAQ
Q: Why does my wooden cutting board warp more on one side?
A: One side is usually getting more water, heat or airflow than the other. For example, if you wash only the top or dry it leaning against a wall, that face will swell or shrink faster and pull the board out of shape. Treating both sides the same way every time greatly reduces this.
Q: How often should I oil my wooden cutting board to prevent warping?
A: In a busy kitchen, oiling every 4 to 6 weeks keeps the grain sealed and more stable. In lighter use, every 2 to 3 months is usually enough. Always oil both faces and all four edges, and let the board rest for at least 8 hours before using it again.
Q: Can I put my Deer & Oak board in the dishwasher?
A: No, wooden and bamboo boards should never go in the dishwasher. High heat, strong detergents and long exposure to water will almost always cause warping and can lead to cracks. Hand wash in warm soapy water, rinse both sides and dry straight away.
Q: Which Deer & Oak board is best if I’m worried about warping?
A: If you want maximum stability, the Large Acacia Board at 45 x 35 cm and 2.1 kg is a very solid choice. If you prefer bamboo, the Carbonised Bamboo Board at 45 x 35 cm and 1.9 kg offers a dense, pre oiled surface that resists everyday movement when it is washed and dried correctly.
