How to stop your wooden cutting board warping

If you want a board to stay flat for 5 to 10 years, the routine matters more than anything else. Here is a simple, practical care pattern that works with our bamboo and acacia boards:

  1. Wash both sides every time
    Use warm water and a tiny amount of mild washing up liquid. Clean the working face first, then quickly wash the back so moisture is balanced.
  2. Never soak or dishwash
    Even 10 minutes submerged in a sink can push water deep into the fibres. A single dishwasher cycle can undo months of careful oiling.
  3. Dry upright on its edge
    Stand the board on its long edge so air can circulate on both faces. Most boards that warp were left flat on a damp surface.
  4. Oil regularly
    For a busy family kitchen, oil every 4 to 6 weeks. For lighter use, every 2 to 3 months is usually enough. Use a food safe mineral oil or board conditioner.
  5. Keep away from direct heat
    Do not leave boards on top of warm ovens, near hobs or in direct sunlight for hours. Slow, even drying is kinder than fast heat.

Does the type of wood affect warping?

Can you fix a warped wooden cutting board?

  2. Press flat while drying
    Place the board concave side down on a clean, flat surface and stack 3 to 5 kg of evenly spread weight on top. Leave for 24 hours.
  3. Re oil generously
    Once the board has moved closer to flat, apply 2 to 3 coats of food safe oil to all sides, allowing at least 20 minutes between coats.

For heavier warping or twist, a professional can sand or plane the board flat, although you will lose a small amount of thickness. If a board has cracked through, it is usually safer to replace it.
