1. Wash fast, never soak
- Hand wash with warm water and a small amount of washing up liquid.
- Keep contact time with water under 5 minutes.
- Never leave the board in a sink of water, even for 10 minutes.
- Never put bamboo boards in the dishwasher, even on an eco cycle.
This prevents the Moso bamboo fibres from taking on too much water and swelling unevenly.
2. Dry both sides evenly
- After washing, towel dry both faces and all four edges straight away.
- Stand the board upright on its long edge or use a rack so air reaches both sides.
- Avoid drying flat on the worktop, which can keep one face damp for up to an hour.
If your board already has a slight curve, store it with the convex (humped) side up for 24 to 48 hours. As the fibres relax, many boards will flatten by 1 to 2 mm on their own.
3. Oil regularly and equally
Oiling does not just make a board look nice. A properly oiled bamboo chopping board is more stable and less likely to warp.
- Use a food safe mineral oil or board cream, not olive or vegetable oil which can go sticky.
- For a new board, oil both sides and the edges once a week for the first month.
- After that, oil every 3 to 4 weeks, or whenever the surface looks dry or rough.
- Apply a thin coat, wait 15 minutes, then wipe off any excess.

4. Use both sides of the board
Many people always chop on the same side, which means one face gets all the knife marks, washing and drying. That side will move differently over time.
- Alternate sides each day or each task.
- Use one side for meat and the other for vegetables if that helps you remember.
This keeps wear, moisture and oiling more even, which reduces the risk of warping.
5. Store away from direct heat
- Keep boards at least 20 cm away from hobs, kettles and toasters.
- Do not store against a warm oven door, radiator or boiler cupboard.
- If your kitchen is very dry in winter, oil a little more often to stop the bamboo shrinking too quickly.
Can I fix a bamboo board that has already warped?

Bamboo vs carbonised bamboo vs acacia: which stays flatter?
