What oil to use for chopping board maintenance?

If you want your wooden or bamboo chopping board to last 5 to 10 years, the best oil to use for chopping board maintenance is a food safe mineral oil, applied in a thin 1 to 2 mm layer every 4 to 6 weeks. For deeper protection, follow with a board wax that combines mineral oil with natural waxes like beeswax or carnauba.

Oiling a 45x35cm wooden chopping board for maintenance

What oil to use for chopping board maintenance in your kitchen

For everyday kitchen use, the safest and most reliable oil for chopping board maintenance is food grade mineral oil. It does not go rancid, it is tasteless and odourless, and it penetrates 1 to 3 mm into the wood or bamboo to slow down cracking and warping.

At Deer & Oak, all our boards, from the 45x35cm Large Bamboo Board to the 2.1kg Large Acacia Board, are pre oiled with food safe mineral oil. When you top them up at home with the same type of oil, you are simply continuing the protection they left the workshop with.

Oils you should and should not use on chopping boards

Recommended oils for chopping board maintenance

  • Food grade mineral oil
Ideal for bamboo and hardwood boards. It is stable, clear, and does not oxidise. One 250 ml bottle will usually cover a 45x35cm board 8 to 10 times.
  • Board cream or wax (mineral oil + wax)
Use after mineral oil for a tougher finish. Waxes help seal the surface so water beads on top instead of soaking in.
  • Specialist cutting board oils
These are often just mineral oil with vitamin E or similar additives. They are suitable as long as they are labelled food safe and non drying.

Oils to avoid on chopping boards

  • Olive oil, vegetable oil, sunflower oil
These can turn sticky and rancid in 2 to 8 weeks, leaving odours and discolouration.
  • Nut oils if you cook for guests
Walnut oil and similar can be food safe but may be risky for anyone with allergies.
  • Raw linseed or other drying oils
They form a hard film that can flake and is harder to refresh on a heavily used kitchen board.

How to oil a chopping board in 5 simple steps

If you are wondering exactly what to do with the oil once you have it, follow this simple routine. It works on all Deer & Oak boards, whether it is a 1.2kg medium bamboo board or a 2.1kg acacia block.

  1. Clean the board
Wash with warm water and a tiny amount of mild washing up liquid. Rinse and dry thoroughly with a clean towel.
  2. Let it dry fully
Stand the board upright for at least 6 to 12 hours so moisture can escape from both faces. Oiling a damp board traps water inside.
  3. Apply a thin coat of oil
Pour about 5 to 10 ml of mineral oil onto the surface of a 45x35cm board. Spread in a thin 1 to 2 mm layer with a soft cloth or paper towel, covering both sides and all four edges.
  4. Allow it to soak
Leave the board flat for 20 to 30 minutes. For very dry boards, repeat once more so the wood or bamboo is evenly saturated.
  5. Wipe off the excess
Buff with a clean, dry cloth until the surface feels smooth, not greasy. Stand upright to finish drying for another 2 to 3 hours.

For heavy daily use, such as a family kitchen that chops on a board 2 to 3 times a day, repeat this process every 4 to 6 weeks. For lighter use, every 2 to 3 months is usually enough.

How often to oil different types of chopping board

Different materials absorb oil at different rates. Here is a practical guide for typical home use.

  • Bamboo chopping boards such as the Deer & Oak Bamboo Double Pack: every 4 to 8 weeks, as bamboo is quite dense but has many small fibres that benefit from regular oiling.
  • Acacia chopping boards such as the Deer & Oak Acacia Board set: every 6 to 10 weeks, as acacia is naturally oily and more water resistant.
  • Carbonised bamboo boards like our Carbonised Bamboo Board: every 4 to 6 weeks, as the heat treatment slightly opens the structure and benefits from consistent care.

Linking the right oil to the right chopping board problem

Choosing the right oil is not just about looks. It solves very specific problems that appear over months and years of use.

  • Board feels rough and fuzzy after washing
This usually means the fibres have lifted. A light sand with 240 grit paper followed by mineral oil will smooth the surface again in 5 to 10 minutes.
  • Visible cracks along the grain
Often caused by moisture swings. Regular oiling slows the rate of water absorption, which reduces the stress that creates cracks, especially on larger 45x35cm boards.
  • Board smells after cutting onions or meat
Odours can cling more to dry, unsealed wood. Cleaning promptly then maintaining a well oiled surface makes smells easier to wash away.
  • Board warping or rocking on the worktop
Usually one side is drying faster than the other. Oiling both faces and all four edges, then storing the board upright, helps keep moisture levels more balanced.

Who this is for

Ideal for...
Home cooks who use a wooden or bamboo chopping board at least 2 to 3 times a week and want it to last 5 to 10 years. Anyone who owns a Deer & Oak board and wants to match the original factory finish with the correct food safe mineral oil care routine.

Not recommended for...
People who only use plastic boards and prefer to put everything in the dishwasher, or anyone who does not want to spend 10 to 15 minutes every month on basic board maintenance. If you need a board that can sit in water or go through a 65°C dishwasher cycle every day, a traditional wooden or bamboo board is not the right choice.

FAQ

Q: Can I use olive oil or vegetable oil on my chopping board?

A: It is not recommended. Olive oil and most vegetable oils oxidise over time, which can make your board feel sticky and smell unpleasant after 2 to 8 weeks. A food grade mineral oil stays stable and gives much more reliable long term protection.

Q: How do I know when my chopping board needs oiling?

A: Splash a few drops of water on the surface. If the water soaks in within 5 to 10 seconds instead of beading, it is time to re oil. You may also notice the colour looking pale and dry, especially in the centre of a 45x35cm board.

Q: Is mineral oil safe for food preparation?

A: Yes, as long as it is clearly labelled food grade or suitable for chopping boards and worktops. This type of mineral oil is odourless, tasteless and does not react with food, which is why we use it on every Deer & Oak board before it leaves the workshop.

Q: How long does it take to oil a chopping board properly?

A: Active time is usually only 5 to 10 minutes for cleaning, applying, and wiping. You should allow 20 to 30 minutes for the oil to soak in, and ideally let the board stand upright for a couple of hours before heavy use so the surface is fully dry to the touch.

Recommended Deer & Oak boards and where to buy

If you are ready to look after a board with the right oil, start with a well made piece that responds nicely to maintenance. For a generous work surface that suits most British kitchens, we suggest the Large Bamboo Board (45x35cm, 1.8kg, Moso bamboo, £34.99) or the Large Acacia Board (45x35cm, 2.1kg, acacia wood, £44.99). Both arrive pre treated with food safe mineral oil, so you can simply continue their care every few weeks.

You can explore our full range of pre oiled boards on the Deer & Oak chopping board collection, browse value combinations in our board sets, or pick up individual bestsellers through our online shop. Pair any of these with a bottle of food grade mineral oil and a soft cloth, and you will have everything you need to keep your chopping board in good condition for many years.
