How to wash a wooden cutting board with Dawn step by step

  1. Scrape first
    Use a bench scraper or the flat side of a knife to remove food. This takes 10 to 20 seconds and stops food getting worked into the grain.
  2. Mix a mild solution
    Add 1 small pea sized drop of Dawn to about 500 ml of warm water in a bowl or on a soft sponge. You want light suds, not thick foam.
  3. Scrub quickly
    Wipe or lightly scrub the board for 30 to 60 seconds per side. Pay extra attention to knife marks and any meat juices, especially on boards used for chicken or raw meat.
  4. Rinse thoroughly
    Rinse under warm running water for at least 10 seconds per side. If you still see bubbles, keep rinsing. No bubbles should remain in the grain.
  5. Dry immediately
    Pat dry with a clean tea towel for 30 to 60 seconds, then stand the board on its edge or on a rack. Let it air dry for 6 to 12 hours before storing flat.
  6. Re oil regularly
    After several washes with Dawn, or if the surface looks pale or feels rough, apply a thin coat of food safe mineral oil. For most home cooks this is roughly every 3 to 4 weeks.

Follow this routine and a quality wooden board can last 5 to 10 years, even with daily use.

When Dawn dish soap can damage wooden boards

Dawn itself is not the enemy. Long exposure and too much water are. Avoid these four habits if you want your wooden boards to last:

  • Mix 1 tablespoon of white vinegar with 250 ml of water, wipe the surface and leave for 1 minute, then rinse and dry
  • Or use a food safe antibacterial spray, following the contact time on the label

Never use straight bleach on wooden boards. Even a 1:10 bleach solution can discolour bamboo and acacia within 30 seconds and damage the finish on boards like our carbonised bamboo board.
