Why bamboo needs different care to plastic or glass

Bamboo is naturally hard, dense and less porous than many traditional woods, which is why a bamboo chopping board is so good for everyday cooking. It is also kinder to your knives than glass or marble. But it is still a natural material, which means:

  • Too much water can cause swelling and warping
  • Harsh detergents can dry it out and dull the surface
  • Heat can crack or split the fibres

So while you can treat a plastic board a bit roughly, you do need to care for your bamboo chopping board properly if you want it to last years and still look like something you are proud to put on the table.

Daily cleaning: do this every time you use it

Think of daily care as brushing your teeth. Quick, simple, non negotiable. Here is how to clean your bamboo chopping board after each use:

  • Wash by hand only
    Use warm water and a mild washing up liquid. A soft sponge or cloth is ideal. Avoid scourers on the flat surface, as they can scratch the finish.
  • Rinse promptly
    Do not leave your board sitting in soapy water. A quick rinse under the tap is enough.
  • Dry straight away
    Pat dry with a clean tea towel, then stand the board upright so air can circulate around both sides.

Whatever you do, don’t put your bamboo chopping board in the dishwasher. The combination of high heat, steam and strong detergent is a fast track to warping and cracking.

    Sprinkle the board with coarse salt, rub with half a lemon and leave for 5 to 10 minutes. Rinse and dry. It freshens the surface and helps lift light stains.
  • For raw meat and fish
    Wash immediately in hot, soapy water. Rinse well, dry thoroughly and let the board stand upright to air. If you cook meat often, consider keeping one side or one board just for proteins.
  • For stubborn stains
    Make a paste of bicarbonate of soda and water, gently rub it over the stain with a soft cloth, leave for a few minutes, then rinse and dry.

Oiling: the secret to making your board last years

If there is one step that really helps your bamboo chopping board last years, it is regular oiling. Bamboo boards arrive from us pre oiled, but that finish will gradually wear off with washing.

What oil should you use?

  • Food grade mineral oil is ideal
  • Specialist cutting board oil or wax blends also work well
  • Do not use olive oil, vegetable oil or butter, as they can go rancid and smell unpleasant

How often should you oil it?

  • New board: once a week for the first month
  • Everyday use: once a month is usually enough
  • Very dry homes or heavy use: every 2 to 3 weeks

How to oil your bamboo chopping board

  1. Make sure the board is clean and completely dry
  2. Pour a small amount of oil onto the surface
  3. Use a soft cloth or paper towel to rub the oil in, following the grain
  4. Coat both sides and all the edges
  5. Leave to soak in for at least a couple of hours, ideally overnight
  6. Wipe off any excess with a clean cloth

Regular oiling helps prevent cracking, reduces the risk of stains soaking in and keeps that rich, warm bamboo colour that looks so good on the worktop.

Have a darker board or a chunky block? The care routine is almost identical, with just a couple of little tweaks.

Carbonised bamboo

Carbonised bamboo is gently heat treated to achieve that deeper, caramel colour you will see on our carbonised bamboo boards. Treat it exactly as you would natural bamboo:

  • Wash by hand
  • Dry immediately
  • Oil regularly

The rich colour really pops after oiling, so if you like your board looking its best on the table for cheese or charcuterie, a quick oil the day before guests arrive works wonders.

Butcher’s blocks

Thicker boards, like our premium butcher’s block, benefit from a little extra time when drying and oiling, simply because there is more material there.

  • Always stand them on edge to dry so moisture does not sit on the surface
  • Be generous with oil and give it time to soak in
  • If you use one side heavily for chopping, flip it regularly to keep wear even

When your board needs a bit of TLC

Even if you are careful, everyday life happens. Knife marks appear, the surface feels a bit rough, or you forget to oil it for a while. When that happens, you can usually refresh your bamboo chopping board quite easily.

  • For light scratches
    A good oiling often softens the feel and darkens marks so they are far less noticeable.
  • For a rough surface
    Very lightly sand with fine sandpaper, always in the direction of the grain, then wipe away dust and oil thoroughly.
  • If it looks dull and dry
    Give it two or three coats of oil over a couple of days. Let each coat soak in before adding the next.
