Fractionated coconut oil on chopping boards

  • Stability: Fractionated coconut oil is made mostly of medium chain triglycerides. These are much more stable than regular coconut oil, which can go rancid in 3 to 6 months on a board. Fractionated oil typically stays fresh for 12 to 24 months after opening if stored correctly.

For butcher s blocks and boards used daily with meat, we still lean towards mineral oil.

  • Fractionated coconut oil: Works, but you may notice slightly more absorption and need to oil every 2 to 3 weeks if you wash the board multiple times per day.

How to apply fractionated coconut oil or mineral oil to your board

The technique is almost identical for both oils. The main difference is how often you repeat the process.

  1. Clean and dry
    Wash the board with warm water and a small amount of mild washing up liquid. Rinse and dry with a towel. Let it air dry upright for at least 12 hours. The core of a 2.1kg acacia board can take 18 to 24 hours to fully dry.
  2. Measure the oil
    For a 45x35cm board, start with 8 to 10 ml of oil. For a 38x28cm board, 5 to 7 ml is usually enough. Too much oil can leave a tacky surface.
  3. Apply in thin coats
    Use a lint free cloth or paper towel. Work the oil in along the grain on both sides and all edges. Spend at least 60 seconds per side to help it penetrate.
  4. Rest and wipe
    Let the board sit flat for 20 to 30 minutes. If there is visible oil on the surface after that, buff it off with a clean cloth.
  5. Repeat
    For a dry board or a new board, repeat this process 2 to 3 times with 12 hours between coats. After that, switch to a maintenance schedule.
