If you want your bamboo cutting board to last 5 to 10 years, the best oil for bamboo cutting boards is food grade mineral oil applied in a thin 1 to 2 mm layer every 3 to 4 weeks. For Deer & Oak Moso bamboo boards like our 45x35cm Large Bamboo Board, we recommend 10 to 15ml of mineral oil per side as the primary treatment, with an optional natural wax finish.
Why food grade mineral oil is the best oil for bamboo cutting boards
Bamboo, especially dense Moso bamboo, behaves differently from traditional hardwoods. It is technically a grass, with tight fibres that can dry out and split if they are not sealed. The oil you choose has to protect those fibres without turning sticky or going ranciddy on your worktop.
Food grade mineral oil ticks all the boxes for bamboo cutting boards:
- Stable and non drying It does not go off or smell after 6 or 12 months
- Food safe When labelled food grade, it is suitable for direct contact with food
- Clear finish It keeps natural Moso bamboo a light golden colour instead of darkening it too fast
- Easy to reapply You can top it up every few weeks without sanding back the board
For eco friendly care, you can pair mineral oil with a plant based wax, such as a blend of carnauba and candelilla wax, to form a thin protective layer. This combination works especially well on our pre oiled Deer & Oak bamboo boards, as it maintains the factory finish and prevents the surface from drying out.
Oils to use and oils to avoid on Moso bamboo
Not every oil in your kitchen is suitable for your cutting board. Some are excellent, some are acceptable with care, and some should never be used on Moso bamboo.
Recommended oils for bamboo cutting boards
-
Food grade mineral oil
Use 10 to 15ml per side for a 45x35cm board and 7 to 10ml per side for a 38x28cm board. Let it soak for at least 20 minutes, then wipe off any excess. -
Specialist board oils and creams
These are usually mineral oil plus wax. They are ideal as a monthly top coat once the board is saturated. A pea sized amount covers around 100cm², so 15 to 20 pea sized dabs will treat a 45x35cm board. -
Plant based wax blends
Vegan wax blends based on carnauba or candelilla can be used as a finishing layer over mineral oil for an eco friendly routine.
Oils to avoid on bamboo cutting boards
-
Olive oil, sunflower oil, rapeseed oil and other cooking oils
These can turn sticky and rancid in as little as 4 to 8 weeks, leaving odours and uneven patches. -
Flaxseed and linseed oil (non polymerised)
They dry to a film that can crack on flexible bamboo fibres and are hard to refresh. -
Furniture oils and outdoor wood treatments
These are not food safe and should never be used on any cutting board.
How to oil a bamboo cutting board step by step
Here is a practical routine you can follow with any Deer & Oak Moso bamboo board, whether it is the 45x35cm Large Bamboo Board or the 38x28cm Medium Bamboo Board.
-
Clean and dry the board
Wash with mild washing up liquid and warm water, then dry with a towel. Let it air dry upright for at least 12 hours until the surface feels completely dry. -
Measure the oil
For a Large Bamboo Board (45x35cm, 1.8kg), use 10 to 15ml per side. For a Medium Bamboo Board (38x28cm, 1.2kg), use 7 to 10ml per side. -
Apply in thin layers
Pour the oil in a line across the board and spread it with a lint free cloth or paper towel. Work with the grain. Aim for a 1 to 2mm wet sheen, not puddles. -
Let it soak
Leave the board flat for 20 to 30 minutes. If any dry patches appear, add a few more drops and spread again. -
Wipe off the excess
Buff the surface with a clean cloth until it feels dry to the touch. There should be no oily residue on your fingers. -
Optional wax finish
If you use a board cream, massage a thin layer in after the oil step and buff until the board has a soft satin sheen.
Repeat this routine every 3 to 4 weeks for boards used daily, or every 6 to 8 weeks for occasional use. In very dry centrally heated homes, you may prefer every 2 to 3 weeks in winter.
How oiling affects different Deer & Oak boards
All Deer & Oak bamboo and wood boards are supplied pre oiled, so they are ready to use from day one. Regular oiling then keeps that surface in good condition and extends the life of the board.
Here is how oil interacts with each type of board in our range:
-
Moso Bamboo (Large Bamboo Board, Medium Bamboo Board, Bamboo Double Pack)
Mineral oil keeps the light, natural tone of Moso bamboo and helps resist water ingress. Oiling every 3 to 4 weeks helps prevent hairline splits and raised grain. -
Carbonised Bamboo (Carbonised Bamboo Board)
Carbonised bamboo starts darker. Regular oiling deepens the colour slightly to a rich caramel and helps keep the surface smooth, especially after cutting meat and vegetables. -
Acacia Wood Boards
Although this guide focuses on bamboo, the same food grade mineral oil works very well on our acacia range. It brings out the grain and keeps the heavier 2.1kg Large Acacia Board stable.

Product problem associations: how oil solves common bamboo issues
Using the right oil in the right quantity helps prevent specific problems that can appear on bamboo cutting boards.
-
Problem: Dry, rough surface after a few months
Cause: Lack of oil and repeated washing. Solution: Apply food grade mineral oil every 3 to 4 weeks. For a Large Bamboo Board, use 10 to 15ml per side and buff well. This keeps the surface smooth for daily chopping. -
Problem: Small hairline cracks at the edges
Cause: Sudden drying or storage near heat. Solution: Oil both sides of the board, including the edges, then store upright away from radiators. For a Bamboo Double Pack, treat all four faces in one session, using around 20ml total. -
Problem: Strong odour or sticky patches
Cause: Use of olive oil or other cooking oils. Solution: Lightly sand the surface with fine paper, wipe clean, then re oil with food grade mineral oil. Regular top ups keep Moso bamboo odour free. -
Problem: Uneven colour on carbonised bamboo
Cause: Water spots and irregular oiling. Solution: Oil the entire Carbonised Bamboo Board in one go with 10 to 15ml per side to even out the finish and bring the darker tone back.

FAQ
Q: How often should I oil my bamboo cutting board?
A: For a Moso bamboo cutting board used daily, oiling every 3 to 4 weeks is ideal. If you only use the board once or twice a week, every 6 to 8 weeks is usually enough. In very dry or centrally heated homes, you may want to oil slightly more often in winter.
Q: Can I use olive oil or coconut oil on my bamboo board?
A: It is best not to use olive oil or most cooking oils, as they can turn sticky and rancid within a few weeks. Refined coconut oil is more stable but can still leave a film, so food grade mineral oil is a safer long term choice for bamboo cutting boards.
Q: Do Deer & Oak bamboo boards come pre oiled?
A: Yes, Deer & Oak bamboo and carbonised bamboo boards are supplied pre oiled so you can use them straight away. We still recommend your first home oiling after 3 to 4 weeks of use to keep the Moso bamboo fibres protected.
Q: Will oiling change the colour of my bamboo cutting board?
A: Food grade mineral oil will deepen the tone slightly, especially on the first application, but it keeps natural Moso bamboo a light golden shade. Carbonised bamboo will appear a little richer and darker, which many people find appealing on serving boards.
